MOIST MARBLE LOAF CAKE

  • 4 eggs
  • 2 cups of sugar
  • 1 1/2 tablespoons baking powder
  • pinch of salt
  • 1 teaspoon vanilla
  • 8 tablespoons melted butter
  • 1 3/4 cups flour
  • Jell-O instant chocolate pudding mix
  1. In a large bowl crack 4 eggs and add the sugar. beat super well with an electric mixer until the ingredients become super pale and thicken.
  2. Add salt, vanilla, and baking powder and mix to combine.
  3. Add melted butter and continue mixing on medium speed until combined.
  4. Sift in flour and at this point use a spatula to fold the flour in carefully. The mixture WILL come together!!
  5. Separate the mixture into two bowls. In one take the instant chocolate pudding mix and dump about half of it into the batter. mix until combined.
  6. In a greased loaf cake baking pan, add half of the regular batter. spread to the corners. Then add all of the chocolate batter and then add the remaining regular batter. Take a knife and pull it through the mixture, swirling/marbeling anywhere.
  7. Put this in the oven to bake for 35 minutes at 365 degrees.

MINI ECLAIRS

  • 1/4 cup water
  • 2 tablespoons butter
  • 1/4 cup flour
  • 3/4 egg
  1. on the stove take a small pot and put it over medium heat. Add the water and butter and let the butter melt.
  2. Once the butter has melted add the flour all at once and stir until you have a nice dough. This won't take long to achieve but just continue stirring together the flour with the butter-water mixture.
  3. Allow the dough to cool off for around 20-25 minutes before you add the 3/4 egg. Just crack the egg open in a bowl, beat it up, and pour 3/4 of the beaten egg in the pot.
  4. Mix the egg until it is incorporated into the dough. The surface of the dough ball will be a little glossy.
  5. Transfer the dough ball into a piping bag (or ziploc bag) with a large hole at the tip. Pipe out the dough to a length of about 3 inches or pipe them as long as you'd like. Pop them into the oven and bake at 350 degrees for about 20 minutes or until light golden brown. NOTE THAT THE MEASUREMENTS I USED ARE ACTUALLY SMALL AND WILL ONLY GET YOU 14 MINI ECLAIRS.
  6. once out of the oven cool the eclairs and fill with cream filling and top with chocolate ganache.

TRUFFLE CAKE -MINIS
  • 2 tablespoons butter
  • 1/2 cup chocolate morsels or baking chocolate
  • melted chocolate for garnish
  • cherry for garnish
  • 6 tablespoons flour
  • 1/2 teaspoon baking powder
  • touch of vanilla
  1. in a microwave safe bowl put chocolate and butter and microwave until melted. with a spoon stir until the mixture is combined.
  2. add in flour and baking powder. combine well before adding vanilla.
  3. grease cupcake trays and pour batter evenly in each cupcake cavity. this recipe makes 6 mini truffle cakes.
  4. Bake at 350 degrees for 12 minutes and remove. invert onto a plate and drizzle melted chocolat and add a cherry on top (or whatever fruit you like or just more chocolate).
CHOCOLATE CHIP COOKIES
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup softened butter
  • as many chocolate chips as you want
  • 3 cups flour
  • 1 teaspoon baking powder 
  • 1 egg
  1. In a bowl, combine butter, brown sugar, and white sugar until creamy. This can be done by hand but if you would like, you can use a stand mixer or hand mixer.
  2. Add chocolate chips, flour, baking powder, and egg. mix until it forms a dough.
  3. with a cookie scoop or tablespoon scoop even sized balls of dough onto a nonstick cookie sheet. bake at 350 degrees for 10-11 minutes.
YELLOW CAKE

  • 2 cups cake flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup soft butter
  • 1 cup sugar
  • 3 eggs
  • 2 tsp vanilla
  • ¾ cup milk

  1. combine flour, baking powder, and salt. set aside.
  2. beat sugar and butter until fluffy. add eggs. pour in vanilla.
  3. add dry mixture but alternate with milk. Bake at 350 degrees for 25 minutes.

 
KIT KAT CHOCOLATE CHIP COOKIE BARS
brownie mixture:
  • 1 cup white sugar
  • ½ cup butter
  • baking chocolate
  • 3 eggs
  • ½ teaspoon vanilla
  • 1 ¼ cup flour
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • Dark chocolate morsels
  1. melt chocolate and butter. When smooth, remove from heat and add eggs.
  2. Add sugar, flour, vanilla, baking soda, and salt. Add dark chocolate chips to the mixture  
cookie mixture:
  • 1 ⅛ cup of flour
  • ¼ teaspoon baking soda
  • ½ cup butter
  • ¼ cup sugar
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • kit kat pieces
  • milk chocolate chips

  1. in a bowl, whisk flour and baking soda and set aside. combine butter and sugars until fluffy. then add salt, vanilla, and eggs.
  2. add flour mixture and mix until combined. Add chocolate chips and kit kat pieces.
  3. after spreading brownie batter in a pan spread kit kat cookie mixture on top and bake 18 minutes at 350 degrees.
